The story
Agnello Arrosto con Olive e Polenta is a rustic dish from central Italy, with roots in the peasant cooking of Umbria and neighboring regions where lamb, olives, and cornmeal were staple ingredients. The combination of roasted lamb with briny olives and creamy polenta reflects the area’s agrarian traditions: lamb from local pasturage, olives from the hillsides, and polenta as a versatile grain-based side. Osteria del Mulino in Assisi, as noted by the food channel Sentieri Golosi, serves a version that honors this heritage, likely using a slow-roasted leg or shoulder to achieve tenderness. Key ingredients include high-quality lamb (often from the Appenine breeds), flavorful black or green olives—sometimes a mix—and coarsely ground cornmeal for the polenta. A great version distinguishes itself through balance: the lamb should be deeply browned and succulent, seasoned with rosemary, garlic, and perhaps a splash of white wine; the olives must add a salty, fruity punch without dominating; and the polenta should be silky, enriched with butter or olive oil, and finished with a touch of Parmigiano or Pecorino. Regional variations exist across central Italy: in Lazio, cooks might add anchovies or capers to the olives; in Tuscany, the lamb is often cooked with a soffritto of herbs and tomato; and in the Marche, the polenta might be grilled or fried after being set. Some versions use olive paste rubbed into the lamb before roasting. The dish is typically a Sunday or holiday meal, served family-style with the polenta as a bed for the meat and its juices. Osteria del Mulino emphasizes the link to tradition, preparing the agnello arrosto so the meat falls from the bone and the olives melt into the pan sauce, a testament to the rustic elegance of Umbrian cuisine.

Very good raw materials, food cooked very well, generous portions — some dishes take you back to grandmother's cooking and childhood memories. The wine was very good, the flatbread and ham were amazing, the lamb was amazing. We spent €83 for everything including two glasses of wine and two bottles of water.
