The story

Arvoltolo Umbro con Uova di Carpa e Crème Fraîche is a traditional dish from Umbria, Italy, specifically associated with the Lake Trasimeno area. The arvoltolo is a type of fried dough or fritter common in Umbrian cuisine, here topped with fresh carp eggs and crème fraîche. The dish reflects the region’s reliance on freshwater fish and simple, rustic cooking techniques.

Key ingredients include the arvoltolo base (flour, water, salt, sometimes yeast, fried until golden), carp eggs sourced locally from Lake Trasimeno, and crème fraîche for a creamy, tangy contrast. A great version is distinguished by a light, crisp arvoltolo that is not greasy, with carp eggs that are briny and fresh without being overly fishy. The crème fraîche should be used sparingly to balance the richness without overwhelming the delicate roe. The dish is best served immediately, while the arvoltolo is still hot and crisp.

Regional variations may use different fish roe or substitute crème fraîche with local fresh cheese. Some versions present the arvoltolo as a smaller appetizer rather than a main course. The dish is notably featured at Il Molo in Passignano sul Trasimeno, as highlighted by the food guide Sentieri Golosi. This venue is recognized for its authentic interpretation of Lake Trasimeno cuisine, using locally caught carp and traditional preparation methods. The combination of land (fried dough) and lake (carp eggs) captures the essence of Umbrian gastronomic identity.

Highlights from 1 creator review of Arvoltolo Umbro con Uova di Carpa e Crème Fraîche.

  • I really liked this place, especially the view of the lake. The appetizer was great, the roast fish was great, the desserts were interesting and fun. We ate very well — the creamed pike with that sauce I'll remember for a long time, it was the best dish of the day. The service was on par with everything else, the wines were very interesting. The value for money is excellent: €55 per person for the tasting menu with appetizer, first course, second course, pre-dessert, dessert, and a sweet at the end. They really know how to elevate lake fish to extremely delicious dishes.
