The story
A classic Italian dessert from the Umbrian town of Passignano sul Trasimeno, this dish layers a rhubarb and strawberry base with strawberry ice cream, fresh cream, and a crisp strawberry meringue. The combination pairs the tartness of rhubarb with the sweetness of ripe strawberries, creating a balanced, refreshing finale to a meal. The base—often a compote or gelée—provides a soft, fruity foundation, while the ice cream adds creamy coldness and the meringue offers a brittle, airy contrast. As featured on *Sentieri Golosi*, the version served at Il Molo in Passignano sul Trasimeno exemplifies the modern Italian approach to classic fruit desserts, emphasizing texture and seasonal produce.
What distinguishes a great version is the harmony between the rhubarb’s acidity and the strawberries’ natural sugar, ensuring the base is neither too tart nor cloying. The meringue must be shatteringly crisp to offset the smooth ice cream and cream. High-quality strawberries and a properly tempered rhubarb compote are essential. While the dish’s origin is contemporary, likely refined in local Umbrian kitchens, it draws on the broader Italian tradition of *macedonia* (fruit salad) and *zabaglione* pairings. Regional variations might substitute the ice cream with a strawberry sorbet or incorporate a crumble topping instead of meringue, but the trio of fruit, cream, and meringue remains constant. The dish at Il Molo has become a signature, celebrated for its precise execution and bright, seasonal flavors.

I really liked this place, especially the view of the lake. The appetizer was great, the roast fish was great, the desserts were interesting and fun. We ate very well — the creamed pike with that sauce I'll remember for a long time, it was the best dish of the day. The service was on par with everything else, the wines were very interesting. The value for money is excellent: €55 per person for the tasting menu with appetizer, first course, second course, pre-dessert, dessert, and a sweet at the end. They really know how to elevate lake fish to extremely delicious dishes.
