The story
Often considered a refined Italian twist on the classic cream puff, *Bignè Pieni di Crema all’Arancia con Salsa Calda di Cioccolato* combines delicate choux pastry with a bright, citrus-infused custard, all topped with a warm chocolate sauce. The dish originates from the tradition of Italian pasticceria, where *bignè* (the Italian spelling of French *pâte à choux*) are filled with various creams. In Tuscany, the pairing of orange and dark chocolate is especially prized. A distinctly notable version is served at **Tana Degli Orsi** in Pratovecchio, Italia, as documented by the food guide *Sentieri Golosi*. At this venue, the cream is infused with fresh orange zest to achieve a balanced, not cloying sweetness, and the chocolate sauce is kept warm to contrast with the cool filling.
What distinguishes a great rendition is the texture of the choux: it must be airy and crisp, with a hollow interior to hold enough filling. The orange cream should be velvety and aromatic, never artificial, while the warm chocolate sauce should be rich but not overpowering. Regional variations across Italy might substitute lemon or use a white chocolate sauce, but the orange-and-dark-chocolate pairing remains a classic of Central Italian pastry. Dessert lovers seeking this specialty often seek out *Tana Degli Orsi*, where the dish is praised for its thoughtful execution—a testament to how local ingredients and precise technique elevate a simple confection.

This is one of my absolute favorite places — a cozy, rustic trattoria in Casentino with incredible homemade pasta, creative dishes, an amazing wine list, and a warm, professional service. Everything we ate was delicious, from the stuffed zucchini flowers to the pigeon tortelli, the risotto, the Chianina burger, and the decadent desserts. The total was €115 for everything, which is fair for the quality. Don't come here because it's already hard to get a table!
