Burrito Gigante

The burrito gigante, or "giant burrito," is an oversized variation of the classic Mexican-American burrito, known for its substantial size and hearty fillings. Its origins trace back to California and the Southwestern United States, where taquerias began offering larger portions to satisfy appetite-driven customers, often marketed as a challenge or shareable meal. Unlike a standard burrito, the gigante typically uses a tortilla that is 12 inches or wider, requiring careful assembly to avoid tearing.

Key ingredients include a large flour tortilla, seasoned rice, refried or whole beans (often pinto or black), and a choice of protein such as carne asada, carnitas, or grilled chicken. Additional components like shredded cheese, sour cream, guacamole, pico de gallo, and salsa are layered inside, with some versions incorporating french fries or extra chili. What distinguishes a great burrito gigante is the balance of fillings: each bite should contain a harmonious mix of textures and flavors, with a tortilla that is warm and pliable, never soggy or brittle. The best examples are constructed tightly, allowing the fillings to meld without spilling.

Regional variations abound. In Southern California, the "California burrito" style—stuffed with carne asada, cheese, and french fries—is common.
