Ceviche is a raw fish dish originating from the coastal regions of Peru, Ecuador, and Chile, where it has been prepared for centuries. The dish reflects the culinary traditions of these Pacific-facing nations and has become emblematic of Latin American cuisine worldwide.

The fundamental preparation involves marinating fresh, high-quality raw fish—typically sea bass, flounder, or other firm white fish—in citrus juices, predominantly lime or lemon. The acidity of the citrus chemically "cooks" the fish's proteins without heat, a process known as denaturation. Beyond the fish and citrus, essential ingredients include diced red onions, cilantro, and chili peppers, with salt and sometimes fish sauce added for depth.
