The story
Cordone di Frate con Porcini is a traditional pasta dish from the mountainous regions of northern Italy, particularly associated with the area around Belvedere. The name translates to "Friar's Cords," referring to the distinctive shape of the pasta—thick, twisted strands that resemble the knotted rope belt of a monastic habit. The dish is a celebration of the region's prized porcini mushrooms, which are foraged from the surrounding forests during the autumn season.
Key ingredients include the hand-rolled pasta cords, fresh porcini mushrooms, garlic, parsley, extra-virgin olive oil, and a generous grating of aged Parmigiano-Reggiano. Some versions incorporate a splash of white wine or a touch of cream, but purists argue that the earthy, nutty flavor of the porcini should remain the star. A great version is distinguished by perfectly al dente pasta that retains a satisfying chew, porcini that are sautéed until golden but not soggy, and a sauce that clings to the cords without overwhelming them.
According to *Where The Foodies Go*, an exceptional rendition is served at **Rifugio dell'Alpino** in Belvedere, Italy. The venue is praised for its commitment to sourcing local porcini and preparing the dish with a rustic, mountain-hut simplicity that honors the tradition. Regional variations may include the addition of pancetta or truffle oil, but the classic preparation remains a testament to the wild, woodsy flavors of the Italian Alps.

Rifugio dell'Alpino is a mountain restaurant in Rocca Santa Maria that serves incredible mushroom dishes — we only ever make it through the antipasti and primi because everything is so good and abundant. The food is fresh, the mushrooms are fantastic, and the price of €100 for everything we ate plus wine and coffee is fair. The view behind us is spectacular, and there's even a relaxation corner after the meal. Top top top.
