The story

Cremato di Luccio con Roveja e Latte Acidulo is an Umbrian dish that pairs creamed pike from Lake Trasimeno with roveja, an ancient field pea native to the region, and a tangy sour-milk sauce. Its origin lies in the culinary traditions of the area around Passignano sul Trasimeno, where freshwater fish and legume-based preparations have long been staples. The key ingredients are pike fillets, roveja, and "latte acidulo" — typically fresh milk left to sour naturally or lightly fermented to mimic the acidity of buttermilk. A great version achieves a silky, almost mousselike texture from the pike, heightened by the earthy, nutty roveja and the sharp, creamy counterpoint of the sour milk. The balance of flavors and temperatures — warm creamed fish against cool, bright dairy — distinguishes an excellent execution. While the exact dish appears specific to Il Molo in Passignano sul Trasimeno, as featured by the platform Sentieri Golosi on ReTubeIt, regional variations might substitute other Lake Trasimeno fish such as perch or tench, or replace roveja with chickpeas or fava beans. Some cooks could add wild herbs like nepitella or use a touch of anchovy for depth. The combination of Lake Trasimeno’s catch, Umbrian heirloom legumes, and fermented dairy creates a uniquely local expression of the region’s cucina povera.

  • I really liked this place, especially the view of the lake. The appetizer was great, the roast fish was great, the desserts were interesting and fun. We ate very well — the creamed pike with that sauce I'll remember for a long time, it was the best dish of the day. The service was on par with everything else, the wines were very interesting. The value for money is excellent: €55 per person for the tasting menu with appetizer, first course, second course, pre-dessert, dessert, and a sweet at the end. They really know how to elevate lake fish to extremely delicious dishes.
