The story
The crostata con crema cotta e pinoli con lamponi al rum e caramello salato al limone is a refined Italian tart that originates from the culinary traditions of Tuscany. This dessert layers a buttery pastry shell with a baked custard filling (crema cotta), toasted pine nuts, rum-soaked raspberries, and a drizzle of lemon-infused salted caramel. The combination of creamy, nutty, fruity, and salty-sweet elements creates a complex flavor profile.
A great version is distinguished by a crisp, non-soggy crust; a silky, set custard that isn’t eggy; pine nuts that are lightly toasted for aroma; raspberries macerated in rum long enough to deepen without overwhelming acidity; and a caramel that is glossy, slightly bitter from the lemon, and balanced with sea salt. The interplay of textures—crunch, creaminess, juiciness—is key.
This particular expression is featured at Tana Degli Orsi in Pratovecchio, Italia, as highlighted by the food blog Sentieri Golosi. Regional variations in Italy might substitute other berries (e.g., blueberries or blackberries) or replace the rum with grappa or limoncello for a different aromatic lift. The lemon caramel is a modern touch that distinguishes this version from more classic crostate with simple fruit jams.

This is one of my absolute favorite places — a cozy, rustic trattoria in Casentino with incredible homemade pasta, creative dishes, an amazing wine list, and a warm, professional service. Everything we ate was delicious, from the stuffed zucchini flowers to the pigeon tortelli, the risotto, the Chianina burger, and the decadent desserts. The total was €115 for everything, which is fair for the quality. Don't come here because it's already hard to get a table!
