The story
Fiori di Zucca Ripieni di Ricotta, Mozzarella e Acciughe con Salsa di Pomodoro Crudo e Spaghettini di Zucchina is a stuffed zucchini flower dish that originates from the cucina povera traditions of central and southern Italy. The classic preparation involves stuffing the delicate blossoms with a mixture of ricotta, mozzarella, and salted anchovies, which provides a creamy, salty contrast to the mild flower. This version, as served at Tana Degli Orsi in Pratovecchio, Italia (as noted by the culinary guide Sentieri Golosi), pairs the fried flowers with a raw tomato sauce (salsa di pomodoro crudo) and spaghetti-thin strips of zucchini (spaghettini di zucchina) instead of pasta, creating a lighter, textural counterpoint.
A great version of this dish is distinguished by the freshness of the zucchini flowers, which must be picked the same day to avoid wilting. The filling should be balanced: the ricotta offers a mild creaminess, the mozzarella provides stretch, and the anchovy adds an umami punch that does not overwhelm the other ingredients. The batter, if used, should be light and crisp, allowing the flower to remain visible. The raw tomato sauce must be vibrant and acidic, made from ripe tomatoes, olive oil, and basil, while the zucchini spaghettini should be barely cooked to retain a slight crunch.
Regional variations abound: in Rome, the flowers are often fried without anchovies and served as street food; in Campania, they may include a hint of mint or a pinch of chili flakes. Some versions substitute provola for mozzarella or add prosciutto. Tana Degli Orsi’s interpretation, combining both the stuffed blossoms and a fresh vegetable “pasta,” reflects a contemporary approach that honors the original while introducing modern technique and presentation.

This is one of my absolute favorite places — a cozy, rustic trattoria in Casentino with incredible homemade pasta, creative dishes, an amazing wine list, and a warm, professional service. Everything we ate was delicious, from the stuffed zucchini flowers to the pigeon tortelli, the risotto, the Chianina burger, and the decadent desserts. The total was €115 for everything, which is fair for the quality. Don't come here because it's already hard to get a table!
