The story
The **focaccia con mortadella al tartufo** is a Northern and Central Italian specialty that combines pillowy, oil-brushed focaccia with slices of mortadella—a finely ground, cured pork sausage from Bologna—and shaved or slathered black truffle, typically from Umbria or Piedmont. Its origins lie in the region of Emilia-Romagna, where mortadella is a prized charcuterie, and the addition of truffle elevates the street-food staple into a luxurious sandwich enjoyed as a quick lunch or aperitivo.
Key ingredients include a high-hydration focaccia dough made with strong flour, extra-virgin olive oil, salt, and yeast; mortadella, preferably studded with pistachios or black pepper; and fresh or preserved black truffle (Tuber melanosporum or Tuber aestivum) or truffle paste. A great version balances the focaccia’s crisp, airy crumb and salty olive oil finish against the mortadella’s silky, delicate pork flavor and the truffle’s earthy, musky perfume. The bread must be warm, the mortadella sliced paper-thin, and the truffle applied judiciously—overwhelming either component ruins the harmony.
Regional variations abound: in Bologna, bakers often sandwich mortadella between two halves of plain warm focaccia, while in Umbria, where black truffles are abundant, the focaccia is split and filled with truffle cream before mortadella is added. In some versions, the focaccia dough itself is studded with truffle chunks. The dish has gained international popularity as an upscale panino.
At **Osteria dal Re** in Orvieto, Italy, user JustUs reported a disappointing execution, noting that the focaccia lacked the requisite crispness and the mortadella was overwhelmed by a cloying truffle oil. JustUs’ critique underscores the dish’s delicate balance—when any element is handled carelessly, the sandwich fails.

Highlights from 1 creator review of Focaccia con Mortadella al Tartufo.
Osteria dal Re is a historic spot on Via del Duomo with 50 years of activity. The homemade focaccia has great dough, but the version with mortadella and truffle sauce we tried was disappointing due to the fake truffle flavor and cold temperature. The price of €9 for half a focaccia is too high. It seemed to cater mostly to tourists.
