The story

Funghi al Forno con Rosmarino is a rustic Italian antipasto or contorno that showcases the earthy depth of oven-roasted mushrooms, typically porcini or cremini, infused with fresh rosemary, garlic, and high-quality olive oil. The dish originates from the wood-fired kitchens of central and northern Italy, where foraged mushrooms are abundant in autumn. A great version achieves a perfect balance: the mushrooms are roasted until tender and lightly caramelized, never soggy, with the rosemary lending a piney fragrance that complements the umami richness. Salt, black pepper, and a final squeeze of lemon are essential to brighten the flavors.

At Rifugio dell'Alpino in Belvedere, Italy—highlighted by the guide *Where The Foodies Go*—the dish is prepared in a traditional wood-burning oven, which imparts a subtle smokiness that elevates the simple ingredients. Regional variations exist across Italy: in Tuscany, cooks might add a splash of vin santo or pecorino shavings, while in Lombardy, a dusting of parsley and breadcrumbs creates a light crust. Some modern interpretations incorporate balsamic glaze or truffle oil, though purists argue these mask the mushroom’s natural character. Served hot or at room temperature, Funghi al Forno con Rosmarino remains a beloved staple of Italian cucina povera, proving that humble ingredients, treated with care, can produce extraordinary depth of flavor.

  • Rifugio dell'Alpino is a mountain restaurant in Rocca Santa Maria that serves incredible mushroom dishes — we only ever make it through the antipasti and primi because everything is so good and abundant. The food is fresh, the mushrooms are fantastic, and the price of €100 for everything we ate plus wine and coffee is fair. The view behind us is spectacular, and there's even a relaxation corner after the meal. Top top top.
