The story
**Gambuccio di Porcino con Arance**
Gambuccio di Porcino con Arance is a refined Italian dish that showcases the prized porcino mushroom (Boletus edulis) in a unique preparation. The name "gambuccio" refers to the mushroom's stem, which is the star of the dish, typically sliced lengthwise to highlight its meaty texture. The dish pairs these earthy, nutty stems with the bright, citrusy notes of oranges, creating a balance of umami and acidity that is characteristic of modern Italian mountain cuisine.
The dish is particularly associated with the Rifugio dell'Alpino in Belvedere, Italy, where it has been highlighted by the culinary guide *Where The Foodies Go*. A great version of Gambuccio di Porcino con Arance depends on the quality of the porcini—ideally foraged from the surrounding alpine forests—and the precise balance of the orange element, which may appear as a reduction, zest, or segmented fruit. The mushrooms should be sautéed until golden and tender, never soggy, while the orange component must cut through the richness without overwhelming the mushroom's delicate flavor.
Regional variations may incorporate local herbs like thyme or rosemary, or add a touch of aged cheese such as Parmigiano-Reggiano for depth. Some versions use blood oranges for a more intense color and sweetness, while others employ a balsamic glaze to complement the citrus. The dish is often served as a starter or a light main course, reflecting the seasonal, ingredient-driven ethos of the Italian Alps.

Rifugio dell'Alpino is a mountain restaurant in Rocca Santa Maria that serves incredible mushroom dishes — we only ever make it through the antipasti and primi because everything is so good and abundant. The food is fresh, the mushrooms are fantastic, and the price of €100 for everything we ate plus wine and coffee is fair. The view behind us is spectacular, and there's even a relaxation corner after the meal. Top top top.
