The story
Insalata di Porcini con Parmigiano e Scorza di Limone is a refined Italian salad that celebrates the earthy, nutty flavor of fresh porcini mushrooms. Originating in the forested regions of Northern and Central Italy, where porcini are foraged in autumn, the dish exemplifies the Italian philosophy of minimalism, allowing a few high-quality ingredients to shine. The key components are thinly sliced raw porcini mushrooms, shavings of aged Parmigiano-Reggiano, fresh lemon zest, extra-virgin olive oil, salt, and often a touch of black pepper or fresh parsley.
A great version hinges on the quality and freshness of the porcini; they should be firm, white-fleshed, and free of blemishes. The mushrooms are sliced paper-thin to maximize their delicate texture, then dressed lightly so the oil and lemon brighten rather than overwhelm. The Parmigiano must be shaved at the last moment to preserve its crystalline crunch, and the lemon zest should be finely grated to infuse the dish with aromatic citrus oils without bitterness.
Regional variations exist: in Tuscany, cooks might add a drizzle of aged balsamic vinegar, while in Piedmont, a few drops of white truffle oil are sometimes used for extra luxury. At Rifugio dell'Alpino in Belvedere, Italy, the dish is prepared in a classic style, as highlighted by the foodie channel *Where The Foodies Go*, which praised the venue for sourcing local porcini and using a generous hand with the Parmigiano. The salad is typically served as an antipasto, pairing beautifully with a crisp, mineral-driven white wine like a Gavi di Gavi or a Franciacorta.

Rifugio dell'Alpino is a mountain restaurant in Rocca Santa Maria that serves incredible mushroom dishes — we only ever make it through the antipasti and primi because everything is so good and abundant. The food is fresh, the mushrooms are fantastic, and the price of €100 for everything we ate plus wine and coffee is fair. The view behind us is spectacular, and there's even a relaxation corner after the meal. Top top top.
