Octopus and Potatoes

Octopus and potatoes is a rustic Mediterranean dish, likely originating in the coastal regions of southern Italy, particularly Campania and Sicily, where octopus is abundant. The combination of tender cephalopod and hearty tubers appears in various forms across Greece, Spain, and Portugal, but the Italian iteration is often celebrated for its simplicity and balance.

Key ingredients include octopus (cleaned and tenderized), waxy potatoes, extra-virgin olive oil, garlic, lemon, fresh parsley, and sometimes chili flakes or oregano. A great version depends on technique: the octopus must be cooked slowly until fork-tender—often simmered with a wine cork for natural tenderizing—then finished on a grill or in a pan for smoky char. Potatoes are typically boiled or roasted to a creamy interior with crisp edges. The dish is dressed generously with olive oil and lemon, allowing the sea-sweetness of the octopus to complement the earthy potatoes.

Regional variations abound. In Greece, octopus and potatoes may be baked with tomatoes, onions, and oregano (known as *htapodi me patates*). Spanish *pulpo a la gallega* substitutes paprika and is served over boiled potatoes. In the Campania region, the recipe is often served as a warm salad or a light main course.
