The origin lies in the *cucina povera* of Lazio, where offal was prized for its rich flavor and economical use of the whole animal. Key ingredients are the intestine itself—often left with the chyme (semi-digested milk) inside, which creates a creamy sauce when cooked—plus salt, pepper, and olive oil. A great version is distinguished by the perfect balance of a crisp, charred exterior and a tender, velvety interior; the inner milk must be cooked to a smooth consistency without becoming gritty.
