The story
Risotto con Zafferano, Salsiccia, Caprino e Asparagi is a contemporary Italian risotto that brings together four distinct ingredients: saffron, sausage, goat cheese, and asparagus. The dish likely emerged from central Italy, where saffron cultivation (particularly in Abruzzo and Tuscany) and fresh goat cheese are common, and where sausage is a staple in rustic cooking. The combination elevates a simple risotto by pairing the floral, earthy notes of saffron with the savory richness of Italian pork sausage (salsiccia), the tangy creaminess of caprino (goat cheese), and the bright, grassy flavor of asparagus.
A great version of this dish is distinguished by its texture—the rice must be perfectly al dente, each grain distinct yet bound by a creamy, non-stodgy emulsion achieved through careful mantecatura. The saffron should be infused properly to give a deep golden hue without bitterness. The sausage is typically crumbled and browned to add texture and umami, while the goat cheese is stirred in at the end, melting lightly to contribute a subtle tang that cuts through the richness. The asparagus, often blanched or sautéed, should retain a slight bite to contrast with the soft rice.
Regional variations may substitute other local cheeses (such as pecorino or Parmigiano-Reggiano), use spicy or sweet sausage depending on preference, or include vegetables like peas or artichokes in place of asparagus. At Tana Degli Orsi in Pratovecchio, Italia, the dish is served according to the recommendations of the creator Sentieri Golosi, who emphasizes the use of seasonal, locally sourced ingredients to achieve the balance that defines an exceptional risotto.

This is one of my absolute favorite places — a cozy, rustic trattoria in Casentino with incredible homemade pasta, creative dishes, an amazing wine list, and a warm, professional service. Everything we ate was delicious, from the stuffed zucchini flowers to the pigeon tortelli, the risotto, the Chianina burger, and the decadent desserts. The total was €115 for everything, which is fair for the quality. Don't come here because it's already hard to get a table!
