The story
Scampi con Boccioli di Funghi Porcini is a refined Italian seafood dish that pairs tender scampi (langoustines or large prawns) with the delicate, unopened buds of porcini mushrooms, known as *boccioli*. The dish originates from the forested alpine and subalpine regions of northern Italy, where foragers prize these tiny, intensely flavored mushroom caps. Unlike mature porcini, the boccioli offer a firmer texture and a more concentrated, earthy sweetness that complements the briny richness of the scampi.
A great version of this dish hinges on the freshness of both primary ingredients. The scampi should be succulent and lightly seared, never overcooked, while the boccioli are typically sautéed in butter or olive oil with garlic and a splash of white wine to create a light, aromatic sauce. Parsley and a squeeze of lemon are common finishing touches, allowing the natural flavors to shine without heavy cream or tomato.
One celebrated rendition is served at **Rifugio dell'Alpino** in **Belvedere, Italy**, as featured by the guide *Where The Foodies Go*. There, the dish is prepared in the traditional mountain-lodge style, emphasizing the purity of locally foraged porcini buds and fresh Adriatic scampi. Regional variations may see the addition of tagliolini or risotto, transforming it into a heartier primo piatto, while coastal versions sometimes incorporate cherry tomatoes or a hint of chili for brightness.

Rifugio dell'Alpino is a mountain restaurant in Rocca Santa Maria that serves incredible mushroom dishes — we only ever make it through the antipasti and primi because everything is so good and abundant. The food is fresh, the mushrooms are fantastic, and the price of €100 for everything we ate plus wine and coffee is fair. The view behind us is spectacular, and there's even a relaxation corner after the meal. Top top top.
