The story
Semifreddo alla Banana e Frutto della Passione is a classic Italian semifreddo, a partially frozen dessert that balances the creamy sweetness of banana with the tartness of passion fruit. According to *Sentieri Golosi*, the version served at Il Molo in Passignano sul Trasimeno exemplifies this contrast, relying on ripe banana purée and fresh passion fruit pulp folded into a light custard base of eggs, sugar, and whipped cream. The dish is typically frozen without churning, yielding a mousse-like texture that is airy yet rich, with no ice crystals—this smoothness distinguishes a great semifreddo.
Key ingredients include ripe bananas for natural sweetness and body, passion fruit for acidity and bright seeds, and a stable foam structure from Italian meringue or zabaglione. The passion fruit’s acidity cuts the banana’s density, while the high fat content of cream ensures a velvety mouthfeel. Regional variations may swap the fruit duo for other pairings, such as strawberry and lemon or mango and lime, but the combination of banana and passion fruit is especially popular in central Italy, where tropical fruits meet local dairy traditions. In Umbria, where Lake Trasimeno’s Il Molo is located, such semifreddi often appear on summer menus. To achieve a great result, the custard must be fully chilled before freezing, and the banana should not oxidize—light lemon juice can be used—while the passion fruit seeds provide bursts of acidity and visual appeal.

I really liked this place, especially the view of the lake. The appetizer was great, the roast fish was great, the desserts were interesting and fun. We ate very well — the creamed pike with that sauce I'll remember for a long time, it was the best dish of the day. The service was on par with everything else, the wines were very interesting. The value for money is excellent: €55 per person for the tasting menu with appetizer, first course, second course, pre-dessert, dessert, and a sweet at the end. They really know how to elevate lake fish to extremely delicious dishes.
