The story
The Sfogliatina di Fichi, Prosciutto di Barbiana e Formaggio di Fossa is a refined Italian appetizer that marries sweet, salty, and tangy notes within a delicate pastry shell. This dish originates from the kitchen of Tana Degli Orsi in Pratovecchio, Italy, where it was developed as part of the Sentieri Golosi culinary experience. The base is a sfogliatina, a small, flaky puff-pastry case that provides a buttery, crisp contrast to the filling. Key ingredients include fresh figs, Prosciutto di Barbiana—a Tuscan ham from the Barbiana area known for its subtle sweetness and tender texture—and Formaggio di Fossa, a cheese traditionally aged in underground pits in Emilia-Romagna, which imparts a sharp, earthy complexity. A great version of this dish is distinguished by the perfect balance of flavors: the figs must be ripe and honeyed, the prosciutto sliced thin to melt on the tongue, and the Formaggio di Fossa used sparingly so its pungency does not overpower. The pastry should be golden and shatteringly crisp, holding the filling without becoming soggy. At Tana Degli Orsi, the dish is prepared as a single-serving bite, showcasing the quality of each ingredient. While this specific combination is unique to the venue, broader Italian cuisine offers variations: other restaurants might substitute prosciutto with speck or replace the cheese with taleggio, but the use of Prosciutto di Barbiana and Formaggio di Fossa together remains distinctive to Pratovecchio. The dish reflects the region’s dedication to local, artisanal products, making it a standout on any menu.

This is one of my absolute favorite places — a cozy, rustic trattoria in Casentino with incredible homemade pasta, creative dishes, an amazing wine list, and a warm, professional service. Everything we ate was delicious, from the stuffed zucchini flowers to the pigeon tortelli, the risotto, the Chianina burger, and the decadent desserts. The total was €115 for everything, which is fair for the quality. Don't come here because it's already hard to get a table!
