The story

Sorbetto al Mojito Caramellizzato is a modern Italian frozen dessert that fuses the classic mojito cocktail with sorbetto and a caramelized sugar element. Its origin is largely attributed to contemporary gelaterie experimenting with cocktail-inspired flavors, though a notable rendition is served at Il Molo in Passignano sul Trasimeno, Italy, as featured by the food guide *Sentieri Golosi*. This particular version highlights the interplay of the mojito’s fresh lime and mint with the depth of caramelized sugar, creating a dessert that is simultaneously bright and deeply sweet.

Key ingredients include fresh lime juice, mint leaves, white rum, sugar (often caramelized before incorporation), and water or a light milk base for sorbetto texture. What distinguishes a great version is the balance: the lime acidity must cut through the caramel’s richness, the mint should taste fresh rather than cooked, and the rum’s alcohol burn must be present but not overwhelming. The caramelization adds a subtle bitterness and complexity absent from a standard mojito sorbet.

Regional variations are limited but growing. Some makers substitute dark rum for a more robust profile, or use brown sugar instead of white to deepen the caramel notes. Others add a small amount of cream for a softer mouthfeel. In Passignano sul Trasimeno, Il Molo reportedly finishes the sorbetto with a thin caramel shell, shattered upon serving—an approach praised by *Sentieri Golosi* for its theatricality and textural contrast. Outside Italy, variations may incorporate local citrus or herbs like basil, but the core identity remains a boozy, herbaceous, caramel-kissed sorbetto that is best enjoyed as a palate-cleansing finale to a meal.

  • I really liked this place, especially the view of the lake. The appetizer was great, the roast fish was great, the desserts were interesting and fun. We ate very well — the creamed pike with that sauce I'll remember for a long time, it was the best dish of the day. The service was on par with everything else, the wines were very interesting. The value for money is excellent: €55 per person for the tasting menu with appetizer, first course, second course, pre-dessert, dessert, and a sweet at the end. They really know how to elevate lake fish to extremely delicious dishes.
