The story
The Spugna di Rocket e Maionese is a contemporary Italian dish that combines the peppery bite of rocket (arugula) with the creamy richness of mayonnaise in a sponge-like form. Its origins are modern, emerging from the experimental Italian culinary scene; the dish is notably served at Il Molo in Passignano sul Trasimeno, as documented by the food guide Sentieri Golosi. The core ingredients are finely chopped rocket, emulsified mayonnaise, and a binding agent—typically eggs and a small amount of flour or starch—baked or set into a light, airy sponge. A great version achieves a delicate balance: the rocket should retain its fresh, sharp flavor without becoming bitter, while the mayonnaise provides a subtle tang and silky mouthfeel without overwhelming the greens. The texture must be spongy yet moist, never dry or rubbery. Regional variations may incorporate local herbs, such as basil or parsley, or substitute the mayonnaise with a lighter aioli made from the region’s olive oil. At Il Molo, the dish is presented as an antipasto, often accompanied by a dusting of Parmigiano-Reggiano or a drizzle of aged balsamic vinegar, showcasing the Umbrian lakefront venue’s commitment to reinterpreting local ingredients through modern technique.

I really liked this place, especially the view of the lake. The appetizer was great, the roast fish was great, the desserts were interesting and fun. We ate very well — the creamed pike with that sauce I'll remember for a long time, it was the best dish of the day. The service was on par with everything else, the wines were very interesting. The value for money is excellent: €55 per person for the tasting menu with appetizer, first course, second course, pre-dessert, dessert, and a sweet at the end. They really know how to elevate lake fish to extremely delicious dishes.
