The story
The Triplo Cioccolato Amedei 100% Venezuela is a luxury dessert that showcases the intense, single-origin cocoa from the Amedei chocolate company, widely regarded as one of the finest in the world. The dish appears as a signature offering at Il Tirabusciò, a restaurant in Bibbiena, Italy, curated by the gastronomic guide Sentieri Golosi. It is a triple-chocolate preparation—typically employing a dark chocolate mousse, a ganache, and a feuilletine or crisp base—all made exclusively with Amedei’s 100% Venezuela bar, which is prized for its fruity, floral, and deeply bitter notes. What distinguishes a great version is the mastery of texture: the mousse must be airy yet rich, the ganache velvety, and the crunchy element delicate enough to contrast without overwhelming the cocoa. Temperature also matters—served slightly cool to let the chocolate’s complexity unfold on the palate. While “triplo cioccolato” is a classic Italian dessert concept, most traditional versions mix dark, milk, and white chocolate. Il Tirabusciò’s variation is purist, using only the Venezuelan origin in three different textures, a choice that elevates it beyond standard triple-chocolate cakes. Regional variations in Tuscany often include local olive oil or vin santo, but this rendition remains faithful to the chocolate itself, making it a benchmark for Amedei-based pastry.

A very interesting and elegant place with dishes made very tastefully, more particular dishes; we personally liked everything, with the trout tartare and the duck ragù pici being the stars of the day, and the triple chocolate dessert being one of the best chocolate desserts I've eaten in Italy.
