A festive Roman-style second course: tender milk-fed lamb shoulder roasted together with artichokes, potatoes, olives, and aromatic herbs. Quick to prepare and incredibly flavorful, perfect for Christmas celebrations.

Method

  1. Heat a generous amount of olive oil in a large oven-safe pan over high heat.
  2. Cut potatoes with skin into wedges and add to the hot pan. Sear until golden on all sides.
  3. Meanwhile, clean the artichokes: remove outer leaves, trim the top, cut into wedges, and rub with lemon to prevent browning.
  4. Add the artichokes to the pan with the potatoes. Season with salt, pepper, chili pepper, rosemary, and mint (mentuccia). Sauté briefly.
  5. Push the vegetables to the sides of the pan. Add the lamb shoulder (abbacchio) in the center. Sear well on all sides.
  6. Deglaze with white wine and a splash of apple cider vinegar. Add lemon wedges and a handful of olive ascolane (stuffed olives).
  7. Transfer the pan to a preheated static oven at 200–220°C (400–430°F). Roast for about 35 minutes, until the lamb is tender and the vegetables are caramelised.
  8. Serve hot, spooning the pan juices over the meat and vegetables.
