This Roman-style pasta is made with quality olive oil, garlic, and chili pepper, plus a secret ingredient: salted anchovies that melt into the oil, creating a deeply savory sauce. It's ready in minutes and can be finished with lemon zest or pecorino cheese for extra freshness or creaminess.

Method
- Clean the salted anchovies: rinse them, remove the bones, and pat dry.
- Heat a generous amount of olive oil in a pan over low heat.
- Add the anchovies to the warm oil and let them melt slowly, stirring occasionally.
- Add the garlic (either whole cloves crushed in half or chopped) and chili pepper to taste.
- When the garlic turns golden, the sauce is ready.
- Meanwhile, cook spaghetti in salted water until al dente.
- Transfer the pasta directly into the pan with the sauce, using tongs.
- Toss the pasta in the pan, allowing any excess water to evaporate completely; the pasta should be oil-coated, not creamy.
- Optionally, finish with lemon zest or mix in a little pecorino cheese and a splash of pasta water for a creamy variation.
