Chicken Wings in Sweet and Sour Sauce

A perfect snack for watching a match or sharing with friends: crispy chicken wings glazed in a homemade sweet and sour sauce, easy to make and full of flavour.

Ingredients
12 items- Chicken WingsChoose good-quality chicken wings, preferably free-range if available.
- VinegarWhite wine vinegar or any clear vinegar works.
- SugarWhite granulated sugar.
- WaterFor the sauce and for the slurry.
- Tomato PasteTomato concentrate; passata can be used as a substitute.
- Fresh GarlicFresh garlic; regular garlic also works.
- Chili PepperRed or green chili, to taste. Used in the sauce and optionally as garnish.
- Potato StarchPotato starch; cornstarch or rice flour can be used as substitutes.
- Extra Virgin Olive OilExtra virgin olive oil; seed oil is also fine.
- SaltTo taste.
- Spring OnionOnly the green part is used, sliced.
- Sesame SeedsWhite sesame seeds for garnish.
Method
- Start making the sweet and sour sauce: combine vinegar, sugar, and a little water in a pot. Heat gently to dissolve the sugar and let it reduce slightly.
- Add a squeeze of tomato concentrate (or passata if you don't have it) to the pot.
- Chop fresh garlic and chili finely. Add to the pot.
- Cook the sauce for about 5 minutes.
- In a small bowl, mix potato starch with cold water until smooth (slurry).
- Add the slurry to the sauce, stirring well, and cook for another 3 minutes. Season with salt to taste.
- Meanwhile, prepare the chicken wings: if they have hairs, burn them off with a kitchen torch or over a gas flame.
- Heat a generous amount of oil in a pan. Place the wings skin side down and sear for about 4 minutes until golden and crispy.
- Flip the wings and cook for another 2 minutes.
- Remove excess oil from the pan, then pour the sweet and sour sauce over the wings. Cook for another 2 minutes, tossing to glaze the wings evenly.
- Slice the green part of the spring onion. Transfer the wings to a serving plate, pour any remaining sauce over them.
- Garnish with sliced spring onion greens, sesame seeds, and extra chopped chili if desired. Serve immediately.
