Tuna Amatriciana

A creamy and delicious take on the classic Amatriciana, using fresh tuna instead of the traditional pork cheek. The guanciale adds richness, while the pecorino creates a creamy sauce.

Method

  1. Cut fresh tuna into small pieces.
  2. Slice guanciale into slices then into cubes.
  3. Render the guanciale in a pan until crispy.
  4. Set aside the crispy guanciale.
  5. In the guanciale fat, toast the tuna for a few minutes.
  6. Add a pinch of pepper and set aside the tuna.
  7. Add tomato passata.
  8. Cook the spaghetti.
  9. Return the tuna to the tomato sauce.
  10. At the end, risotto (add pasta water) and mantecare (emulsify with cheese).
  11. Add crispy guanciale and a generous amount of grated Pecorino Romano.
  12. Toss vigorously to create a creamy sauce.
  13. Serve with plenty of sauce, crispy guanciale, and more Pecorino Romano.
