A Sicilian-inspired sweet version of arancini, filled with a rich dark chocolate and orange ganache, coated in a light batter and breadcrumbs, fried golden, and rolled in sugar.

Method
- Toast the rice in a pot until it changes color, then deglaze with prosecco and add water.
- Cook the rice, then mantecare (stir in) grated Grana Padano, butter, and vanilla.
- Spread the rice in a bowl and let it cool for a while.
- For the ganache: finely chop the dark chocolate, heat the cream with orange zest, then combine to make a shiny ganache.
- After the rice has rested, form the arancini: place some rice in your hand, make a well, fill with ganache, cover with more rice, and shape.
- Prepare a batter with water and flour.
- Dip the arancini in the batter, then coat in breadcrumbs twice.
- Fry the arancini in hot oil until golden.
- Roll the fried arancini in granulated sugar.
