A quick and delicious sandwich made with salt cod (baccalà), homemade mayonnaise, fresh herbs, and crunchy vegetables, served on soft milk buns.

Ingredients

- Fresh Spring Onionfinely chopped

- Parsleychopped

- Chili Pepperseeds removed, chopped
- Lime Zestgrated zest
- 2 pcsPanini Al Lattemilk buns
Method
- Take the salt cod (baccalà) — it must be small and well soaked to remove excess salt and water.
- Prepare the mayonnaise: in a blender, combine seed oil, one egg, pinches of salt, and lime juice. Start from the bottom and blend, gradually raising the blender until emulsified.
- Finely chop fresh spring onion, basil (use a sharp knife or tear by hand), parsley, celery, and chili (remove seeds).
- Mix the chopped herbs and vegetables into the mayonnaise.
- Add lime zest and a pinch of salt to the mixture.
- Cut two milk buns in half and lightly toast or warm them.
- Spread some of the sauce (the mayonnaise mixture) on the inside of the buns.
- Fill the buns with the baccalà and the remaining sauce.
- Serve immediately.
