Crispy fried monkfish bites coated in a crunchy breadcrumb crust, served with fried tomatoes and a fresh tomato, onion, and basil salad. A perfect dish to make kids love fish.

Method

  1. Cut the monkfish into thin, bite-sized pieces.
  2. Prepare three bowls: one with flour, one with beaten eggs, and one with coarse breadcrumbs (panco).
  3. Coat each fish piece first in flour, then in egg, then in breadcrumbs.
  4. Heat oil in a pan to 160–170°C (320–340°F) for frying the fish.
  5. Fry the breaded monkfish pieces until golden and cooked through, turning as needed. Drain on paper towels.
  6. For the tomatoes: coat small tomatoes (or tomato slices) in flour, egg, and breadcrumbs, then fry in oil at a higher temperature until crispy on the outside and still raw inside.
  7. Make a salad: slice a mix of colorful tomatoes, add sliced fresh onion, fresh basil leaves, salt, extra virgin olive oil, and lemon juice to taste.
  8. Serve the fried monkfish bites with the fried tomatoes and fresh salad.
