Broccoli slowly cooked with white wine, garlic, and chili until tender, then finished with a light caramelization. A traditional Roman side dish from mamma Fiorella.

Ingredients
6 items- Broccoli1 head
- Garlic1 clove
- Dried Chili Pepperto taste
- White Winesplash
- Extra Virgin Olive Oilto taste
- Salt(optional) — to taste
Method
- Clean the broccoli and cut into florets.
- In a pan, heat a drizzle of olive oil with a clove of garlic and a pinch of dried chili.
- Add the broccoli and sauté for a minute.
- Add a splash of white wine, cover, and reduce heat to low.
- Cook for about 20 minutes, until the broccoli is very tender.
- Uncover, increase heat to reduce any remaining liquid, allowing the broccoli to caramelize slightly.
- Season with salt to taste and serve.
