A clever way to reuse leftover panettone: crunchy panettone cannoli filled with a creamy custard and chantilly cream, dusted with powdered sugar.

Ingredients
7 items- PanettoneLeftover panettone, sliced into discs
- 1/2 lMilk
- 7 pcsEgg Yolks
- 130 gSugar
- 40 gAmido di mais (o farina)Cornstarch or all-purpose flour
- Whipped Cream(optional) — To taste, for chantilly cream
- Powdered Sugar(optional) — For dusting
Method
- Slice the panettone into discs.
- Place the discs between two sheets of parchment paper and flatten with a rolling pin.
- Wrap each flattened disc around a cannoli mold.
- Bake at 200°C (400°F) for 10 minutes until crisp.
- Prepare the cream: heat half a liter of milk in a saucepan.
- In a bowl, whisk 7 egg yolks with 130 g of sugar and 40 g of cornstarch (or flour).
- When the milk is hot, incorporate it into the egg mixture, then return everything to the saucepan and cook over low heat, stirring constantly with a whisk, until thickened.
- Let the cream cool, then fold in whipped cream to taste (chantilly cream).
- Fill the crispy panettone cannoli with the cream using a piping bag.
- Dust with powdered sugar before serving.
