A fresh and easy appetizer combining shrimp, mozzarella, tomatoes, and basil on toasted bread, inspired by the classic Caprese salad. Perfect with a glass of Prosecco.

Method
- Slice the rustic bread and toast it lightly with a drizzle of olive oil.
- Slice the white and red onions (or scallions) thinly. Soak them in water with a splash of white wine vinegar to soften the sharpness.
- Clean the shrimp: remove the heads and shells, then devein them. Reserve the heads to extract the coral for extra flavor.
- Slice the tomatoes (preferably Sicilian cherry tomatoes) and season with a pinch of salt.
- Cut the buffalo mozzarella into pieces.
- Assemble the dish: place the toasted bread on a plate, then layer the tomatoes, mozzarella, and halved shrimp on top.
- Add the drained onions, Taggiasche olives, and fresh basil leaves.
- Drizzle with extra virgin olive oil, season with salt and pepper to taste. Optionally, add a squeeze of lemon or lemon zest.
