A classic Neapolitan recipe for artichokes stuffed with a savory mixture of breadcrumbs, capers, parsley, and scamorza cheese, then braised in olive oil and water until tender.

Ingredients
9 items- CarciofiFresh artichokes
- GarlicGarlic cloves, to taste
- Extra Virgin Olive OilExtra virgin olive oil
- CapersCapers
- BreadcrumbsWet and squeezed breadcrumbs
- ParsleyFresh parsley, chopped
- Black PepperBlack pepper, to taste
- ScamorzaScamorza cheese, preferably smoked, grated or diced
- SaltSalt, to taste
Method
- Prepare the stuffing: heat extra virgin olive oil in a pan and add garlic, capers, wet and squeezed breadcrumbs, parsley, black pepper, and scamorza cheese. Mix well.
- Prepare the artichokes: trim the stems and tough outer leaves, then open the inner leaves with your fingers to form a flower-like shape.
- Fill each artichoke with the stuffing mixture, pressing it gently between the leaves.
- Place the stuffed artichokes upright in a pot. Add a drizzle of olive oil, salt, and enough water to reach halfway up the artichokes.
- Cover the pot and cook over medium heat for about 30 minutes, until the artichokes are tender and the liquid has reduced.
