A traditional Sicilian baked cassata made with mountain ricotta, reduced sugar, and dark chocolate, baked slowly to bring out the delicate flavor of the ricotta. The pastry is handmade and thin, creating a perfect balance of creamy filling and crispy shell.
Ingredients

- Mountain RicottaMountain ricotta
- Sugar20% of the weight of the ricotta

Method
- Prepare an artisanal shortcrust pastry (pasta forla) by hand, rolling it out thin and soft.
- Place the pastry in a casserole dish, as the Arabs did when inventing cassata.
- Combine mountain ricotta with 20% sugar (by weight of ricotta) and plenty of dark chocolate.
- Spread the ricotta mixture evenly over the pastry base, then cover with another layer of pastry.
- Bake slowly in the oven to cook through gently.
- Decorate with a light dusting of powdered sugar and cinnamon.
