Carnival Castagnole

Three recipes for Carnival treats are promised, but the chef shows how to make soft and aromatic fried dough balls called Castagnole. The dough is flavored with lemon zest and anise liqueur, fried at 160°C, then rolled in sugar.

Ingredients
10 items- 200 gFlourAll-purpose flour; may need up to 250 g depending on flour type
- Aroma alla Vaniglia in Polvere(optional) — Vanilla powder; can substitute with vanilla bean or extract
- 8 gBaking PowderBaking powder
- 2 pcsEggsLarge eggs
- 50 gSugarGranulated sugar; plus extra for coating after frying
- Untreated Lemon ZestZest of 1 organic lemon
- 25 gSunflower OilSunflower oil; also used for frying
- Anise Liqueur(optional) — Half a shot glass (about 25 ml); can substitute with nocino or other liqueur
- Crema alla Nocciola (per decorare)(optional) — Hazelnut spread for optional topping
- Olio di Arachidi (per friggere)Peanut oil or sunflower oil for frying; chef prefers sunflower
Method
- Sift 200 g of flour with 8 g of baking powder and vanilla powder (or vanilla extract).
- In a separate bowl, beat 2 eggs with 50 g of sugar until fluffy.
- Grate the zest of an untreated lemon into the egg mixture and stir.
- Add 25 g of sunflower oil and half a shot of anise liqueur (or other liqueur like nocino). Mix well.
- Gradually incorporate the dry ingredients into the wet mixture and knead until you obtain a soft, slightly sticky dough. If needed, add a little more flour (up to 250 g total).
- Roll the dough into long snakes (like gnocchi) and cut into pieces. Roll each piece into a small ball.
- Heat sunflower oil in a deep pan to 160°C (use a thermometer). Fry the balls in batches, turning them occasionally until golden brown and puffed up.
- Remove with a slotted spoon and drain on paper towels. Immediately roll the hot castagnole in granulated sugar.
- Optionally, drizzle with hazelnut cream or serve as is.
