A quick and easy strawberry compote with cinnamon and lemon zest, perfect for using up slightly overripe strawberries. This compote is rich in fruit and low in sugar, meant to be consumed within a few days.

Ingredients
4 items- 750 gStrawberriesabout 700–750 g; slightly overripe or leftover strawberries work well
- 250 gSugaradjust to taste; the chef uses less sugar because the compote is eaten quickly
- Lemon Zestfrom ½ untreated lemon, or to taste
- Cannella in stecca1 stick, or to taste
Method
- Wash and dry the strawberries thoroughly.
- Cut the strawberries in half or quarters.
- Grate the zest of an untreated lemon.
- Add a cinnamon stick to the pot.
- Add the sugar (250 g) to the strawberries.
- Bring to a boil, then reduce to a gentle simmer. Cook for 40 minutes, stirring occasionally.
- Let the compote cool completely.
- Serve with toast, butter, or fresh ricotta.
