A traditional rabbit dish from the island of Ischia, featuring authentic Mediterranean flavors with garlic, thyme, white wine, cherry tomatoes, and basil. Simple to prepare and incredibly flavorful.

Ingredients
9 items- Coniglio (Rabbit)whole, cut into pieces
- Olive Oilfor sautéing
- 1 pcsGarlicwhole head, lightly incised
- Timo (Thyme)to taste
- White Wineenough to deglaze
- Cipolla (Onion)abundant, chopped
- Cherry Tomatoesas needed
- Basilabundant, fresh leaves
- Saltto taste, adjust at end
Method
- Cut the whole rabbit into small pieces (already done in the video).
- Add a drizzle of oil to the bottom of a casserole.
- Add the rabbit pieces and brown them well over medium heat.
- Add a whole head of garlic, each clove lightly incised, and stir in.
- Add thyme.
- Add white wine and let the alcohol evaporate.
- Add abundant onion.
- While the wine evaporates, prepare the cherry tomatoes.
- Add the cherry tomatoes and abundant basil.
- Add salt (adjust at the end).
- Cover and cook over medium-low heat for one hour.
- Check occasionally; if liquid is lacking, add a little water.
- Taste and adjust salt if needed.
