Glazed pork ribs are a great classic of American cuisine, a symbol of conviviality and intense flavors.

- Remove the membrane from the back of the ribs using a knife.
- Prepare the marinade: mix mustard with the taco and burrito spice mix.
- Apply the marinade to the ribs, massaging it in on both sides. Sprinkle a little extra spice mix on top.
- Let the ribs marinate for at least 1 hour, preferably 2 hours or overnight in the refrigerator.
- Wrap the ribs first in parchment paper, then in aluminum foil.
- Cook in a static oven at 130-140°C for at least 3 hours.
- Meanwhile, prepare the glazing sauce: combine barbecue sauce, apple cider vinegar, sugar, honey, and the spice mix in a saucepan. Heat until well combined, then set aside.
- After 3 hours, remove the ribs from the oven. Carefully unwrap, leaving the ribs on the parchment paper.
- Brush the ribs generously with the glazing sauce.
- Return the ribs to the oven, now set to 180-190°C (static), and cook for 10-15 minutes until glazed and caramelized.
- Serve the ribs hot.
