A smooth and velvety broccoli cream, enriched with crunchy bread croutons and finished with a drizzle of extra virgin olive oil. A simple yet delicious Tuscan-inspired dish perfect as a starter or light meal.

Ingredients
7 items- BroccoliBroccoli head, outer leaves removed
- Extra Virgin Olive OilFor cooking and finishing
- Garlic1-2 cloves, crushed

- WaterEnough to cover the broccoli
- Stale BreadStale bread, cut into cubes
Method
- Take the broccoli, remove the outer leaves, and cut into florets. Place in a pot with extra virgin olive oil, crushed garlic, salt, and pepper.
- Add water to cover and cook for about 10 minutes, until the broccoli is very soft.
- Meanwhile, cut stale bread into cubes.
- In a pan, toast the bread cubes with extra virgin olive oil and a pinch of salt until golden and crunchy.
- Blend the cooked broccoli and its cooking liquid until smooth and creamy.
- Serve the broccoli cream in bowls, top with the crunchy croutons, and finish with a drizzle of raw extra virgin olive oil.
