Method
- Prepare the crêpe batter as in the sweet crêpe recipe (eggs, water, sifted flour, salt, melted butter, milk). Rest 30-40 minutes, then strain.
- Heat a non-stick crêpe pan and grease with pork fat. Cook thin crêpes, optionally adding turmeric to the batter for color. Set aside.
- For the filling: shred leftover cooked chicken into a bowl. Add cooked chickpeas, salt, pepper, olive oil, and a pinch of chili. Mix well.
- Add chunks of salmon and enough cheese (e.g., a soft melting cheese) to bind the mixture. Set aside.
- For the saffron sauce: in a pan, combine cream and milk. Add saffron and the remaining cheese. Stir over low heat until the cheese melts and the sauce thickens. Season with a pinch of salt.
- Take a crêpe, place a portion of the filling in the center, fold or roll it up. Repeat.
- To serve, place the filled crêpe on a plate. Spoon the saffron sauce over it. Drizzle with parsley oil and garnish with fresh basil leaves.
- Serve immediately.
