Potato Croquette 'M'Bottita

A simple and crispy potato croquette served with creamy stracciatella and anchovies, inspired by Roman street food.

Ingredients
10 items- Boiled PotatoesBoiled potatoes, preferably yellow or red-skinned
- SaltTo taste
- PepperA pinch
- Milk(optional) — Optional, to soften the mash
- 1 pcsEggFor breading
- 1 tbspFlourMixed with egg for breading
- Grated BreadBreadcrumbs, preferably homemade from stale bread
- Seed OilFor frying, amount as needed
- StracciatellaCreamy cheese to serve
- AnchoviesAnchovies, preferably preserved in salt
Method
- Boil the potatoes, then peel them while cold to let them lose moisture.
- Mash the potatoes with a pinch of salt and a little pepper.
- Shape the mixture into croquettes using a wet hand for the potato mixture and a dry hand for breading.
- Prepare the breading station: beat 1 egg with 1 tablespoon of flour, and have breadcrumbs ready.
- Dip each croquette first in the egg-flour mixture, then coat with breadcrumbs.
- Heat oil to 170–180°C (test by dipping a wooden spoon; bubbles form around it).
- Fry the croquettes for 3–4 minutes until golden and crispy.
- Drain on paper towels to keep them crunchy.
- Serve immediately with stracciatella cheese, anchovies, and a pinch of salt.
