A crunchy bruschetta bread crust topped with grilled prawns, a rich aioli sauce with anchovies, and a dried fruit and sun-dried tomato condiment. Finished with a drizzle of extra virgin olive oil and fresh basil.

- MarjoramFresh or dried, to taste

- GarlicOne clove or a pinch; used for marinating bread and in the condiment
- Pine NutsA handful
- HazelnutsA handful
- PistachiosA handful
- Dried TomatoesA few, roughly chopped
- Fennel SeedsA pinch
- Chili PepperTo taste, can be dried chili flakes
- MayonnaiseAbout 2-3 tablespoons
- Anchovies2-3 fillets, finely chopped
- ChivesA small bunch, chopped
- 2 pcsJumbo ShrimpLarge prawns, head and shell on or off
- 2 pcsSorrento LemonsFor juice and zest
- Cuttlefish Ink(optional) — For plate decoration (optional)
Method
- Slice a thick slice of bread.
- Marinate the bread with extra virgin olive oil, salt, pepper, marjoram, basil, and a pinch of garlic. Let it absorb.
- Prepare the dried fruit condiment: in a pan, toast pine nuts, hazelnuts, pistachios, sun-dried tomatoes, garlic, fennel seeds, chili, salt, and pepper. Keep aside.
- Prepare the aioli: combine mayonnaise with garlic-infused oil, chopped chives, and chopped anchovies. Mix well.
- Grill the large prawns on the barbecue or a hot griddle pan with a drizzle of oil and lemon juice. Cook briefly until charred.
- Spread a little squid ink on the plate (optional). Place a dollop of aioli in the center.
- Place the bruschetta bread on top of the aioli. Arrange the grilled prawns on the bread.
- Spoon the dried fruit condiment over the prawns.
- Garnish with a fresh basil leaf and a final drizzle of extra virgin olive oil. Sprinkle with black pepper to taste.
