Delightful Bread Crostino

A classic Roman toast from the 1980s pizzerias, reinvented with fresh mozzarella, prosciutto, arugula, and buffalo mozzarella cherries. Perfect for a quick, indulgent meal.

Method

  1. Take bread that is 2–3 days old (not fresh) so it is drier and holds up better.
  2. Place slices of mozzarella on top of the bread.
  3. Cook in a preheated oven at 180°C (or equivalent) until the bread is golden and the cheese has melted.
  4. Remove the crostini from the oven.
  5. Dress arugula with salt and extra virgin olive oil.
  6. Place the dressed arugula on the crostini.
  7. Add slices of prosciutto crudo (aged at least 18 months recommended).
  8. Break buffalo mozzarella cherries (ciliegine di bufala) over the top.
  9. Drizzle with a little more extra virgin olive oil.
  10. Serve immediately.
