Delightful Bread Crostino

A classic Roman toast from the 1980s pizzerias, reinvented with fresh mozzarella, prosciutto, arugula, and buffalo mozzarella cherries. Perfect for a quick, indulgent meal.

Ingredients
7 items- BreadUse bread that is 2–3 days old, not fresh
- MozzarellaFresh mozzarella, sliced
- ArugulaArugula, dressed with salt and oil
- Cervia SaltSalt, preferably Cervia salt
- Extra Virgin Olive OilExtra virgin olive oil, to taste
- Prosciutto Crudo di AmatriceCured ham, aged at least 18 months
- Ciliegine di BufalaBuffalo mozzarella cherries, broken
Method
- Take bread that is 2–3 days old (not fresh) so it is drier and holds up better.
- Place slices of mozzarella on top of the bread.
- Cook in a preheated oven at 180°C (or equivalent) until the bread is golden and the cheese has melted.
- Remove the crostini from the oven.
- Dress arugula with salt and extra virgin olive oil.
- Place the dressed arugula on the crostini.
- Add slices of prosciutto crudo (aged at least 18 months recommended).
- Break buffalo mozzarella cherries (ciliegine di bufala) over the top.
- Drizzle with a little more extra virgin olive oil.
- Serve immediately.
