Toast with Guacamole and Beef Tartare

A crunchy summer crostone with toasted bread, velvety guacamole (Italianized with garlic and olive oil), and a fresh hand-chopped beef tartare. Perfect for hot days when you crave something light yet satisfying.

- Avocado
- TomatoTomato, diced small
- Red OnionRed onion, finely chopped
- Chili Pepper(optional) — Chili pepper, seeded and finely chopped (optional)
- SaltTo taste
- GarlicOne clove, grated
- Beef GirelloBeef topside (girello), hand-chopped
- Black PepperBlack pepper, freshly ground, to taste
- Olive OilExtra virgin olive oil, for guacamole and tartare
- BreadStale bread, sliced thickly
Method
- Squeeze the lime juice into a bowl.
- Cut the avocados in half, remove the pit and skin, and add them to the lime juice to prevent browning.
- Cut the tomatoes into small cubes and add to the bowl.
- Finely chop the red onion and add it.
- If desired, add a chili pepper, seeded and finely chopped.
- Add a pinch of salt.
- Mash everything together with your hands until you get a smooth and creamy guacamole.
- Grate a clove of garlic over the guacamole and mix well. Set aside in the fridge.
- Take the beef girello (topside) and cut it into thin slices, then into strips, and finally chop finely with a knife until you have a coarse tartare.
- Season the chopped beef with salt, freshly ground black pepper, and extra virgin olive oil. Mix well.
- Slice the bread (preferably day-old) into thick slices.
- Heat a pan with a drizzle of olive oil and toast the bread slices on both sides until golden and crispy.
- Spread a generous amount of guacamole on each toast.
- Top with the beef tartare. Serve immediately.
