Crostone with Beef Strips

Juicy beef strips with roasted cherry tomatoes, arugula, basil pesto, and Parmesan on toasted bread.

- 400 gCherry Tomatoes
- Extra Virgin Olive Oilto taste
- Saltto taste
- Oreganoto taste
- 1/2 pcsGarlichalf clove
- 1 tbspBasil Pesto
- Parmigiano Reggianoshavings to taste
- Arugulato taste
- Breadslices for toasting
- Butter(optional) — optional, for toasting bread
- Salsa Cesar(optional) — optional, or mayonnaise
Method
- Cut the cherry tomatoes in half and place on a baking sheet. Season with salt, olive oil, oregano, and a half garlic clove. Roast at 180°C (fan) for about 30-40 minutes.
- In a non-stick pan, heat a drizzle of olive oil and cook the beef slices briefly until just cooked (do not overcook to keep moist). Slice into strips.
- Once the tomatoes are done, remove the garlic. Add the beef strips, arugula, a spoonful of basil pesto, and shavings of Parmesan or Grana Padano. Mix well; the heat will melt the cheese slightly.
- Toast bread slices with a drizzle of olive oil (or melted butter) on both sides in a grill pan or oven until crispy.
- Assemble the crostone: place one slice of toast, add Caesar sauce (or mayonnaise if preferred), then top with the beef and tomato mixture. Close with another toast slice, press gently, and cut.
