A traditional Japanese pancake filled with sweet red bean paste, inspired by the beloved character Doraemon.

- Lievito in Polvere Vanigliato
- OilFor greasing the pan
- Confettura di Fagioli Rossi AzukiRed bean paste (anko), store-bought or homemade
Method
- In a bowl, whisk together the eggs and sugar until well combined.
- Add the milk and mix thoroughly.
- Sift in the flour and vanilla baking powder, then stir until the batter is smooth. Let it rest for 10 minutes.
- Heat a non-stick pan over medium-low heat. Lightly grease with oil and wipe off any excess with a paper towel.
- Pour a small ladle of batter into the pan to form a circle. Cover with a lid and cook for about 2 minutes, until bubbles appear on the surface.
- Flip the pancake carefully using a spatula and cook for another 30 seconds.
- Remove the pancake and let it cool on a wire rack, keeping the browned side up to avoid sticking.
- Spread a generous amount of red bean paste (anko) onto one pancake, then sandwich with a second pancake. Serve immediately.
