  • Fettina di ScamoneThin beef steak from the top round; also called 'pezza' in Rome
  • Olive OilExtra virgin olive oil, generous drizzle
  • 1 pcsGarlicOne clove, smashed (in camicia)
  • RosemaryFresh rosemary sprig
  • SaltTo taste, added at the end
  • PepperFreshly ground black pepper, to taste

Method

  1. Select a thin cut of beef from the top round (scamone/pezza). Cut it in half if you like.
  2. Heat a heavy pan (cast iron or iron) over high heat with a generous drizzle of olive oil and a clove of garlic (smashed, in camicia).
  3. When the oil is hot and the garlic is fragrant, place the meat in the pan.
  4. Cook without moving or cutting the meat until the bottom is well browned (about 1–2 minutes).
  5. Flip the steak and add a sprig of rosemary and some black pepper.
  6. Continue cooking to your desired doneness (the chef recommends rare to medium-rare for maximum tenderness).
  7. Season with salt only at the end, just before serving.
  8. Serve immediately.
