Fettuccine with White Ragù

A classic Sunday pasta dish from Italian tradition: fresh fettuccine tossed in a slow-cooked white ragù made with beef, sausages, and a creamy pumpkin-enriched sauce. The secret is cooking everything at low heat and mantecare (creaming) the pasta directly in a bowl with butter and Parmesan.

Ingredients
15 items- Controfiletto di Manzo (Sottofesa)Choose a well-marbled piece, such as bottom round. Ask your butcher to slice it into thin strips.
- 2 pcsSausageUse good quality pork sausages, roughly chopped.
- 2 pcsCarrotsFinely diced.
- 1 pcsCeleryFinely diced.
- 1 pcsRamata OnionRed onion, finely diced.
- PumpkinA piece of pumpkin or winter squash, peeled and cut into small cubes.
- ButterA generous knob for cooking and for mantecatura.
- Parmigiano ReggianoGrated, to taste. Use a good aged Parmigiano.
- Fettuccine FrescheFresh fettuccine are preferred. If using dried, choose fresh pasta from the refrigerated section. Homemade is best.
- White WineA good quality dry white wine for deglazing.
- RosemaryA sprig, finely chopped.
- SageA few leaves, finely chopped.
- SaltTo taste; be cautious as sausage is salty.
- Black PepperFreshly ground, abundant.
- Brodo di Carne (opzionale)(optional) — Optional; replace with water if unavailable.
Method
- Finely dice the carrots, celery, and red onion into small cubes.
- Cut the beef bottom round (controfiletto) into thin strips.
- Roughly chop the sausages.
- In a large pot, melt a knob of butter over medium-high heat. Add the sausage and brown it well.
- Add the beef strips and let them sear and stick to the bottom of the pot. Do not add vegetables yet.
- Deglaze with a good quality white wine, scraping up the browned bits. Let the wine evaporate.
- Add the diced vegetables and stir, allowing them to soften and caramelize slightly.
- Add the diced pumpkin and continue cooking. The pumpkin should break down and create a creamy sauce.
- Season with salt and pepper. Add a sprig of rosemary and sage leaves, finely chopped. Adjust salt carefully because the sausage is already salty.
- Add water (or beef broth) to cover the meat. Reduce the heat, cover partially, and simmer for at least 40 minutes, stirring occasionally. The ragù should be thick and creamy.
- While the ragù cooks, prepare fresh fettuccine (or buy fresh ones). Cook them in salted boiling water until very al dente.
- When the pasta is ready, transfer it directly from the pasta water into a large serving bowl. Add some ragù (keeping some aside for later), a generous amount of grated Parmesan, and a knob of butter.
- Toss and mix vigorously to 'mantecare' (cream) the pasta until it's well coated and creamy. Add more ragù if needed.
- Serve immediately, topped with extra grated Parmesan and a twist of black pepper.
