A rustic stuffed bread filled with Italian sausage and friarielli (broccoli rabe), a classic Neapolitan combination. The dough is soft and enriched, while the filling is savory and slightly bitter, balanced by creamy fior di latte cheese.

Ingredients

- 375 mlMilkwhole milk
- 20 gBrewer's Yeastfresh yeast
- 2 pcsUova mediemedium eggs
- 70 mlSeed Oilseed oil
- 25 gSaltsalt
- 20 gGranulated Sugargranulated sugar
- 1000 gFriariellior broccoli rabe
- 500 gSausageItalian pork sausage
- 500 gFior di Lattefresh mozzarella
- Pecorinoto taste, grated
- Garlicto taste
- Chili Pepperto taste, dried chili pepper
- 1 pcsEggfor egg wash
Method
- In the bowl of a stand mixer (or a bowl if kneading by hand), place the flour, sugar, crumbled yeast, milk, and eggs.
- Knead for a few minutes, then add the salt and finally the oil in a thin stream.
- Briefly knead by hand, form into a ball.
- Place in a lightly oiled bowl, cover with plastic wrap, and let rise for about 3 hours.
- Meanwhile, prepare the filling: in a pan, heat oil with garlic and chili pepper. Add the friarielli, season with salt, and cook covered until wilted but still crispy.
- In another pan, gently brown the sausage without overcooking.
- After the dough has risen, roll it out on a lightly floured surface into a rectangle, not too thin.
- Spread the friarielli evenly over the dough, then add the browned sausage, torn fior di latte, and grated pecorino to taste.
- Roll up the dough gently, without tightening too much.
- Let the rolled loaf rest for about 30 minutes, then brush with beaten egg.
- Bake in a preheated oven until golden brown.
